Baked salmon at low temperature the ideal way to cook this fish so that it never passes

Posted on January 25, 2020 by Dave Urban

Salmon is one of the fish we like the most. Every time we consume it more for being a healthy fish, rich and easy to prepare. The only problem – for those who are not used to cooking this fish – is the risk of overcooking it and making it dry. That is why today we are going to teach you how to prepare a baked salmon at low temperature, the ideal way to cook this fish so that it never passes.

Instead of cooking it for ten minutes at 190º C as I told you in the easiest recipe in the world of baked salmon, today we are going to use a much lower temperature for a longer time, a technique that will prevent the possibility of being dry.

Strictly speaking, it is not a low-temperature cooker but a roast in the oven with the temperature much lower than usual, achieving excellent results. Logically, the baking time will increase a bit.

Ingredients

For 2 persons

  • Fresh salmon, a loin of about 400 g
  • Salt and pepper to taste
  • Curried basmati rice, for garnish
  • Extra virgin olive oil to varnish the fish slightly

Difficulty: Easy

  • Total time20 m
  • 20 m cooking

We prepare the salmon, cutting a loin of homogeneous size and shape. Keep in mind that the lateral part of the salmon is thicker and that of the ventral area is narrower and cooked before. We chose pieces of the thickest area for this recipe.

In a baking dish lightly smeared with olive oil, we put the fresh salmon with the skin facing down. We season it to taste with salt and pepper and varnish it with a little more extra virgin olive oil. Optionally, you can add some aromatic herbs or a mixture of spices of your liking.

We put the oven to preheat to 140ºC and when it reaches that temperature, we put the salmon to cook, letting it roast in the oven for 20 minutes. At that time, it will cook slowly without passing or drying out.

If you have a probe or thermometer, check that it is done when the interior is at 49 ° C. If you do not have a probe, open the center of the fish with a sharp knife and check that it changed color and can crumble easily.

With what to accompany the baked salmon at low temperature

To accompany this recipe for baked salmon at a low temperature you can choose any side dish of your liking. I usually put potato balls on the tarragon that are very easy to make although this time I accompanied it with a bowl of curry rice and the mixture was delicious.
