The hunting sauce or stews based on it have different versions depending on the region. The Tuscan cacciatora chicken is popular, but also its French namesake, which adapts to many types of meat. This time we adapted the recipe to prepare a chicken stew in a mushroom sauce full of flavor, but that does not require much time.
In the original BBC source, they save more time using concentrated meat broth, but we can take advantage of homemade broth that we have in the fridge, be it chicken, meat or vegetables. Breasts reduce cooking time but are less tasty, so the whole is enriched with smoked bacon and a touch of Worcestershire or Perrins sauce.

How to make chicken in easy hunt sauce

Chop the bacon or bacon into pieces of a bite. Dry the chicken with paper towels, remove any remaining fat and cut into cubes. Wash well and dry the mushrooms; chop or laminate. Chop the garlic or use one or two roasted garlic cloves, if we have.
Heat a casserole slightly and add the bacon. Sauté briefly to brown in your own fat, stirring well. Add the chicken, raise the heat, salt, and pepper and saute a few minutes until golden brown.
Pour mushrooms and garlic, stir and lightly salt and pepper. Cook the whole for about three or four minutes, until the mushrooms begin to release their juices and reduce. Add the flour, stirring quickly to form a paste.
Pour the tomatoes, crush a little and water with the wine. After two minutes, also add the broth, adjusting by eye to form a stew but not too liquid. Spread Worcestershire sauce, reduce heat and cook for at least 15 minutes, or until reduced to taste.
With what to accompany the chicken in hunting sauce
Although this chicken stew with mushrooms already has almost its garnish incorporated, the rich sauce asks to be well used with mashed potatoes, white rice or even pasta, although with good bread to dip we will be more than satisfied. With a simple salad, we will have a full menu for any occasion.
