How to make keto waffles or chaffles the ideal protein recipe for low-carbohydrate diets

The name of chaffles may sound unattractive to us, but it is only one of those terms that are born in the Anglo-Saxon vocabulary when a new culinary invention that revolutionizes networks appears. From the union of cheese and waffles, the waffle keto low-carb was born, ideal for diets seeking to reduce hydrates and boost proteins and fats.

It must be recognized that the premise sounds too attractive not to arouse curiosity. Basically only two ingredients are needed: egg and cheese, although it admits small adjustments to turn these waffles into a tastier bite. Suitable for a ketogenic diet, the best thing about this recipe is its simplicity and it adapts to many variations to taste. And they are not bad.

The waffles authentic, genuine both Belgian and similar versions, are not exactly the prototype of light or very healthy food. The keto version proposes to start from a dough formed only by beaten egg and grated or chopped mozzarella or cheddar cheese, to eat as is or use as a base of “bread” in toasts and sandwiches.

Reading different testimonies and versions by the American networks, it seems that some people throwback the excessive egg flavor and texture of the most original recipe -1/2 cup of cheese for each egg. To avoid it, here we increase the amount of mozzarella to round up to 100 g and use to compensate extra clear, without more yolks.

A flat spoonful of ground almonds also helps to improve the flavor and texture of waffles, without compromising their keto characteristics. Finally, we can flavor the dough with herbs, spices or pepper, or look for a “sweet” version with cinnamon, pure cocoa or vanilla.

  • Egg white30 g

  • Ground almond (1 tablespoon)10 g
  • 0.5 teaspoon salt
  • Ground black pepper to taste
  • Spices to taste

If we are going to bake them, preheat the oven to 180ºC and prepare the mold, with two standard cavities or four smaller ones. If it is silicone or non-stick, it will not be necessary to grease it.

Chop the grated cheese with a knife to make it finer. Beat the whole egg with the extra white in a bowl (we have used pasteurized, to better measure the amount), cheese, almonds and herbs to taste.

Distribute in the mold filling the cavities or prepare in the waffle maker according to the instructions of the apparatus. In the oven it will take about 20 minutes; watch when they take 15 minutes because it depends on the mold. They should be golden.

With what to accompany the waffles

If we make these waffles keto in the oven, it is interesting to give them a blow of gratin, unmold, or pass them through the plate so that they acquire a more crunchy and tasty texture. We can also refrigerate them well wrapped and reheat them in the toaster or pan. They can be accompanied by almost anything, depending on whether or not we are on a diet. They are a good substitute for bread to form a very nutritious and satiating sandwich.
