Pear and ham risotto with gorgonzola, recipe to succeed yes or yes

When I prepared the gorgonzola pear and bacon sandwich, I was sure that this combination would work very well. One of the readers, in the comments he left at the entrance, told me that he had made a similar recipe in risotto format, and quickly I had the need to prepare this gorgonzola pear and ham risotto, which has been equally delicious.

To prepare it at its point, I recommend that you use pears that are not too ripe since they will be undone during cooking that needs arborio or carnaroli rice that is usually used for risottos.

Ingredients

For 4 people

  • Arborio rice250 g
  • Gorgonzola cheese50 g
  • Serrano ham in taquitos75 g
  • Pear2
  • Medium onion
  • White wine a chorreón
  • Vegetable broth whatever you want

How to make gorgonzola pear and ham risotto

We prepare the necessary elements, chopping the scallion, cutting the bacon or ham in small taquitos and sautéing everything together in a saucepan with extra virgin olive oil. Once the onion is transparent, we do not want to toast, add the rice and saute for a minute.

Add the white wine squirt and let it evaporate, adding the first ladle of vegetable broth. While the rice absorbs it, we peel and chop the two pears. To prevent them from falling apart during the cooking of the rice that needs about 20 minutes, we only add one of them to the saucepan, while we continue to cook the rice, incorporating the broth Carcillo to call.

We continue stirring and adding the broth when the previous one has practically disappeared, incorporating the second pear after ten minutes of cooking. In this way, the first pear will disappear practically giving a lot of flavor to the rice and the second one we will find in the form of tripping.

At the end of cooking the rice, we add three or four good gorgonzola sticks, turn off the heat, and stir vigorously so that the whole risotto is impregnated, becoming creamy. If necessary we can add a tablespoon of liquid cream, but usually, it will not be necessary.

You will see how much you like the sweet contrast of the pear with the ham or crispy bacon and the powerful flavor of gorgonzola.
